4 Large Yukon gold potatoes diced into cubes 7 Large Cloves garlic cut in half 1/4 Cup Low sodium chicken broth 1/4 Cup 1% Milk or unsweetened almond milk 1 tsp Fine sea salt 1/4 tsp Ground black pepper 1/2 tsp Dried rosemary 1/4 tsp Italian herb seasoning 3/4 tsp Granulated garlic 2 Tbsp Plain greek yogurt 1 Tbsp Unsalted butter
Peel the potatoes and cut them into small cubes. Peel the garlic cloves and slice them in half.
Put potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil.
Cover and reduce heat. Simmer for 15-20 minutes, or until the potatoes are tender. Check with a fork by poking the potatoes.
Strain the potatoes and garlic in a colander and then transfer them back to the pot.
Add milk, chicken broth, herbs, greek yogurt, salt, and pepper to the pot. Mashed the ingredients with a potato masher until they are smooth.
Optionally top the potatoes with green onions or chives to serve.
Be careful not to over mash your potatoes because they can turn gummy and have a bad texture.
To drain the potatoes and garlic, you can either use a colander or place a lid on the pot carefully and tip it over the sink.
