These Healthy Gluten-Free Chocolate Chip Cookies are a makeover of classic chocolate chip cookies. They have chickpea flour, coconut sugar, coconut oil, and dairy-free chocolate chips. So, not only are they gluten-free, they are dairy-free too. The combination of ingredients makes a soft, fluffy, and sweet cookie! These cookies taste so good that you will be able to fool any non-healthy eater!

Gluten-Free Cookie Inspiration

The reason I wanted to make a gluten-free and dairy-free version is that I have a few close relatives that can’t eat gluten or dairy because of allergies. I know it can be hard to find good recipes for these allergies. So, I wanted to make a version that anyone can enjoy!

I don’t know anyone that doesn’t love a good chocolate chip cookie. They are probably the most loved cookie in the world. Of course, I love anything chocolate related, so I can’t resist these cookies! Healthy Chocolate Chip Cookies and Healthy Chocolate Chip Muffins are my go-to treats. Luckily, I feel much better about the ingredients in them.

Chocolate Chip Cookies Ingredients

I have been experimenting with Garbanzo bean flour since I started getting it in my Purple Carrot food delivery boxes. It’s an interesting flour because of its taste and texture. It doesn’t work in every recipe, but with the other ingredients, it works perfectly in these cookies. If you haven’t tried chickpea flour, I recommend Bob’s Red Mill Brand!

Garbanzo Bean Flour Health Benefits

Some surprising health benefits come from garbanzo bean flour! It’s made out of chickpea’s which naturally contain multiple health benefits. I have listed some benefits below and a full article here for more info!

  • Chickpea flour is rich in vitamins and minerals, such as folate and magnesium.
  • Affects blood sugar less than plain flour.
  • It is packed with fiber because chickpeas are naturally high in fiber.
  • It’s also high in antioxidants that fight cancer-causing substances.

Cookie Ingredient Substitutions

These cookies are gluten-free and dairy-free, but they can also be made vegan. You can substitute the egg with a flaxseed egg replacer. Mix 1 tbsp of flaxseed meal with 3 tbsp of water and let it sit for 5 minutes to thicken. Then you can add it in just as you would add the egg to the ingredients.

For those with nut allergies, you can replace the almond milk with oat milk or coconut milk!

The ground cinnamon is an optional flavor in this recipe, but I highly recommend it! It adds an extra richness to the cookies that makes them unique and flavorful!

Cookie Making Equipment

To make things easier, I always line my Wilton baking sheets with parchment paper because it makes cleaning up easier, and the cookies never have an issue sticking.

Cookie Recipe Notes

  • This recipe will make 12 large cookies or 18 bite-sized cookies.
  • When you melt the coconut oil, make sure it cools down before you mix in the egg. If it’s too hot, it could cook the egg in the batter.
  • This cookie dough can be pre-made and put in the fridge for a few hours before it’s baked.
  • Store the cookies in a plastic bag or air-tight container at room temperature for up to 7 days.
  • These cookies can be frozen for up to 3 months. Wrap them in wax paper and sealed them in two plastic bags. Defrost at room temperature when you’re ready to use them.

Ingredients
  

  • 1/3 Cup Coconut oil melted and cooled slightly
  • 1 1/2 Tbsp Unsweetened almond milk
  • 1/2 Cup Coconut sugar
  • 1 Large Egg at room temperature
  • 1 1/2 teaspoons Vanilla extract
  • 1 1/2 Cups Garbanzo bean flour
  • 1/4 tsp Ground cinnamon
  • 3/4 tsp Baking soda
  • 1/2 tsp Fine sea salt
  • 1/3 Cup Mini semi-sweet chocolate chips Dairy-free

Instructions
 

  • Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
  • In a large bowl whisk together melted and cooled coconut oil, coconut sugar, egg and vanilla extract until smooth and creamy.
  • In a separate bowl, whisk together garbanzo bean flour, baking soda, cinnamon, and salt.
  • Add dry ingredients to wet ingredients until well combined. Then fold in the chocolate chips with a spatula.
  • Use a medium cookie scoop to scoop the dough onto a parchment-lined baking sheet, equally spaced apart. Flatten the cookies slightly with your fingers or a spatula.
  • Bake at 350 for 10-11 minutes or until edges are slightly golden brown.
  • Allow the cookies to cool on a cookie sheet for 5 minutes before transferring to a wire rack to cool.

  6. Really good gluten free chocolate chip cookies are a challenge! I have been gluten free for over 14 years and havent found one I like that doesnt also have dairy in it. I like that you used coconut sugar and coconut oil. I am curious to see if I will like the garbanzo bean flour in this cookie. I will definitely print this out and try it next time I am baking!
