Ingredients
  

  • 2 cups Gluten-free oatmeal quick oats
  • ½ cup Coconut sugar
  • ¼ teaspoon Fine sea salt
  • 1 teaspoon Ground cinnamon
  • ¼ tsp Ground nutmeg
  • 1 Large Egg
  • ½ cup Unsweetened almond milk
  • ¼ cup Natural Peanut Butter
  • 2 teaspoons Pure vanilla extract
  • ¼ cup Walnuts finely chopped
  • ¼ cup Raisins
  • ¼ Cup Semi sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line a 2-quart baking dish or 8x8 square pan with parchment paper.
  • In a medium bowl, combine oats, sugar, salt, cinnamon, and nutmeg and stir to combine.
  • In another large bowl, whisk the egg, milk, peanut butter, and vanilla extract.
  • Combine the wet ingredient into the dry ingredients with a spatula.
  • Fold in the walnuts and raisins and chocolate chips.
  • Spread combined mixture into prepared pan.
  • Bake in the preheated oven until edges are golden brown, about 30-35 minutes.
  • Allow to cool on wire rack for 5 minutes before slicing.
  • Cut into 16 bars.

Notes

  • Use peanut butter that has no added sugar, and the only ingredients are peanuts and salt
  • . If the oatmeal batter is too dry, add two tablespoons of almond milk.
  • At 30-minutes of baking, check the bars to see if they are baked. The tops should be golden and slightly crisp around the edges.
