2 cups Gluten-free oatmeal quick oats ½ cup Coconut sugar ¼ teaspoon Fine sea salt 1 teaspoon Ground cinnamon ¼ tsp Ground nutmeg 1 Large Egg ½ cup Unsweetened almond milk ¼ cup Natural Peanut Butter 2 teaspoons Pure vanilla extract ¼ cup Walnuts finely chopped ¼ cup Raisins ¼ Cup Semi sweet chocolate chips
Preheat oven to 350°F. Line a 2-quart baking dish or 8x8 square pan with parchment paper.
In a medium bowl, combine oats, sugar, salt, cinnamon, and nutmeg and stir to combine.
In another large bowl, whisk the egg, milk, peanut butter, and vanilla extract.
Combine the wet ingredient into the dry ingredients with a spatula.
Fold in the walnuts and raisins and chocolate chips.
Spread combined mixture into prepared pan.
Bake in the preheated oven until edges are golden brown, about 30-35 minutes.
Allow to cool on wire rack for 5 minutes before slicing.
Cut into 16 bars.
Use peanut butter that has no added sugar, and the only ingredients are peanuts and salt
. If the oatmeal batter is too dry, add two tablespoons of almond milk.
At 30-minutes of baking, check the bars to see if they are baked. The tops should be golden and slightly crisp around the edges.
