These Healthy No-Bake Oatmeal Cookies are a better version of classic no-bake cookies. They combine natural peanut butter, natural cocoa, coconut oil, and coconut sugar to make a delicious healthy treat.
Combine the coconut oil, peanut butter, and coconut sugar in a medium saucepan.
Heat over low heat until oil is melted and heat for an additional 2 minutes or until the mixture starts to bubble.
Add in the cocoa powder, vanilla, chocolate chips, almond milk, and sea salt. Stir to combine.
Add oatmeal and mix in well.
Drop the batter equally apart with a medium cookie scoop onto a prepared cookie sheet. The recipe should make 12 large cookies. Let them cool in the freezer or the fridge until they firm up.
Store them in a container in the fridge.
Notes
When you're heating the chocolate, peanut butter, and oil mixture, make sure to not overheat it. Heat and whisk it until the ingredients are combined and bubbly, and then quickly remove from the heat.
Make sure to keep them in the fridge or freezer. The coconut oil will melt if it's too warm and at room temperature.
They should last up to 7 days in the fridge. If you freeze the cookies, wrap them in wax paper and place them in a zip-top freezer bag.
