These Whole Wheat Brownies are the best healthier version of a classic brownie! They are cake-like, moist, and rich in flavor. The ingredient swaps included are whole wheat, coconut oil, natural cocoa, and greek yogurt. But in addition to healthier ingredients, these brownies have not only fresh coffee but instant coffee to pump up the cocoa flavors!
Whole Wheat Brownie Inspiration
I think almost everyone loves nice warm brownies out of the oven. I know I do!
They are the epitome of a delicious chocolate dessert and have good memories associated with them. I remember my mom buying Betty Crocker Brownie Mixes when I was a kid, and she would always try to make them better by adding chocolate chips or flavored baking chips. Either way, they always tasted great!
As much as I love classic brownies, I like making healthy versions of desserts. So, naturally, I had to come up with a recipe! These brownies are a wonderful treat and satisfying too. They aren’t loaded with too many unhealthy ingredients, which makes me feel better physically. Plus, they are husband approved, which makes them even better!
Whole Wheat Brownie Ingredients
- Coconut oil
- Plain yogurt
- Pure vanilla extract
- Eggs
- Coffee
- Whole wheat flour
- Unsweetened cocoa powder
- Coconut sugar
- Instant coffee
- Baking powder
- Fine sea salt
- Semi-sweet chocolate chips
Ingredient Substitutions
These brownies are made with healthier ingredients and are somewhat allergen-free, but certain ingredients can be swapped for different diets.
For one, the plain yogurt can be substituted with unsweetened applesauce to make them dairy-free and still at the extra moistness. Also, make sure to buy a specific dairy-free chocolate chip brand, like Enjoy Life.
I love using coconut oil because I would say it’s a healthier alternative to some fats, and it does great in baking! However, if necessary, you can replace it with melted butter. Also, I used coconut sugar, but you could use turbinado sugar as well.
Lastly, I have never tried it myself, but you could try making these gluten-free by using Pamela’s All-Purpose Baking Blend. It’s a great substitute for most flours, so I can imagine they would turn out well.
Brownie Making Equipment
- 1 large mixing bowl
- Parchment paper
- Measuring cups and spoons
- Whisk
- 2-Quart glass baking dish
These brownies are so easy to make they only require one bowl to mix everything up. Plus, the clean-up is extremely simple when you line your glass baking dish with parchment paper. If you don’t have a 2-quart baking dish, you can also use a 9-inch square cake pan instead.
Recipe Tips and Notes
- Combine the melted coconut oil and the wet ingredients and mix them thoroughly before adding any dry ingredients.
- Make sure not to overmix the brownie batter. The ingredients should be combined until smooth but just barely.
- When baking the brownies, don’t overbake them, or they can turn out dry because of the whole wheat flour. Test them with a toothpick inserted into the center, and it should come out mostly clean.
- Don’t be alarmed if the center of the brownies caves in slightly. Brownies often fall in the center.
- If you want a more fudgy brownie instead of cake-like, leave out the baking powder.
- Make sure to add liquid coffee in these, along with the instant coffee. If you have leftover coffee from a pot or mug, that will work perfectly.

Ingredients
- 1/4 cup coconut oil melted
- 1/4 cup Plain yogurt
- 1 ½ teaspoons Pure vanilla extract
- 2 Large Eggs
- 2 tbsp Cool coffee
- 3/4 cup Whole wheat flour
- 1/2 cup Unsweetened cocoa powder
- 1/2 cup Coconut sugar
- 1 tbsp Instant coffee
- ½ tsp Baking powder
- ¼ tsp Fine sea salt
- 3 Tbsp Semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees F and line a 2-quart baking pan with parchment paper. Grease lightly with non-stick baking spray.
- In a large bowl, whisk together coconut oil, yogurt, vanilla, eggs, and cool coffee.
- Add in flour, cocoa, and coconut sugar, instant coffee, and sea salt, and whisk until combined.
- Spread into prepared pan, sprinkle with chocolate chips and bake for 20 minutes or until a toothpick in the center comes out almost clean. The brownies should still be glossy on top in the middle, but look dry at the edges and the toothpick may have some moist crumbs.
- Cool to room temperature before slicing
I love how clean these are and with the resolutions around the corner these are perfect as a nice palette cleanser and a small dessert.
