One-Pot Italian Chicken and Rice

This One-Pot Italian Chicken and Rice is a wonderfully easy meal for any weeknight! It is full of flavor, with a combination of fresh garlic, oregano, tarragon, Italian seasonings, and organic basil pesto. This dish is comforting and adds a good variety of nutrition to end your meal for the day. It not only has healthy carbs and protein, but it has immune-boosting ingredients, such as garlic, onions, zucchini, and tarragon. If you need an easy meal that keeps you well, this recipe is the one to try!

One-Pot Meals

I love making one-pot recipes because they are so quick, and the cleaning up takes very little time. Also, it’s easy to sneak multiple healthy ingredients into a one-pan dish. I add carbs, vegetables, and protein, to make sure it’s a healthy combination for nutrition needs. Whether it a vegan meal, such as my one-pot vegan chili mac, or my greek turkey pasta, I make sure to add a variety of foods that will satisfy and keep me feeling well.

Chicken and Rice Ingredients

Ingredient Substitutions

For this dish, I used a lot of fresh ingredients and along with pantry staples. These ingredients are either in your pantry, easy to find or easily substituted.

For example, the fresh tarragon and oregano can be swapped for the same amount of dry tarragon or oregano instead.

The Himalayan pink salt is a wonderful option to season this recipe because it has high mineral content. I use it often, along with fine sea salt. However, if you don’t have Himalayan sea salt, plain salt will work too.

Yellow onions are perfect for this dish but can be replaced with red onions, white onions, or shallots. Also, the zucchini squash can be swapped with yellow squash.

Lastly, I used white rice in this recipe, but brown rice can also be used for this dish. It may take longer to cook, but it will produce the same healthy meal.

Since it is a one-pot recipe, the equipment is extremely minimal. The most important thing you will need is a large pot that has a lid. Also, there is a bit of chopping involved, but a good chef’s knife or vegetable chopper will make that simple too.

  • Onions are high in vitamin-c, vitamin-b, folate, and potassium. They have heart health benefits, are loaded with antioxidants, and contain cancer-fighting compounds.
  • Garlic is also high in vitamin-C and vitamin-B6m but also selenium and fiber. It is proven to boost immune systems, and fight off colds and flu systems. Also, it can reduce blood sugar and cholesterol levels.
  • Zucchini is high in vitamin-A, manganese, potassium, vitamin-k, and magnesium. It contributes to a healthy digestive system and may strengthen your vision.
  • Tarragon is high in manganese, iron, and potassium. It may improve sleeping patterns and reduce blood sugar levels.

Ingredients
  

  • 1 Medium Yellow onion chopped
  • 1 Green onion chopped
  • ½ Small Zucchini chopped
  • 1 tbsp Fresh oregano chopped
  • 1 tbsp Fresh tarragon chopped
  • 6 Cloves Garlic minced
  • 10 Oz Raw Chicken breast diced
  • 1/3 Cup Organic basil pesto
  • 1 tsp Himalayan sea salt or plain sea salt
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp Ground black pepper
  • 5 Cups Chicken broth or vegetable broth
  • 1/2 Cup Canned fire roasted tomatoes
  • 2 Cups Uncooked white rice or brown rice
  • 1 tbsp Shredded parmesan cheese

Instructions
 

  • Chop the vegetables, herbs, and dice the chicken.
  • Heat a large pot on medium heat and spray it with nonstick cooking spray. Add the onions, zucchini, chicken, oregano, tarragon, and garlic, and sauté until the chicken is cooked through about 10 minutes.
  • Add the basil pesto, salt, Italian seasoning, pepper, chicken broth, canned tomatoes, and rice.
  • Stir until the ingredients are combined, then cover the pot with a lid and lower the heat. Cook on low for 20 minutes or until the rice is cooked through.
  • Add the Parmesan cheese and stir it into the rice.
  • Serve immediately topped with fresh herbs or extra cheese.

    So simple! The combination of herbs made this delicious. I used brown rice, cooked the rice for 20 minutes alone, then added in the rest of the ingredients and simmered for an additional 20 minutes, so yummy!
